Poach the potatoes and onions in olive oil, once they are soft and slightly golden remove from the heat.
Add 3 eggs into a bowl and mix with the SPF 53 rub then add the potato and onion to a bowl and mix until everything is incorporated. You can use a cast iron skillet or a cast iron jaffle.
Add 75% of the mix if it's a jaffle, if its a skillet add 50% then add desired amount of salumi and brie or any other filling you like. Add the remaining part of the mix. Cook until nice and golden.
