Ingredients
1 x Lamb Rack – Frenched

120g x Lane's BBQ Magic Dust
50ml Olive oil
1 x Bunch of Parsley - Chopped
1 x Lemon Zest & Juice
2 x Garlic cloves - Chopped
3tbsp x Honey
30ml x Olive oil
Salt & Pepper
1kg x Cooked potato – passed through a sieve
3 x Egg yolks
350g x Flour
100g x Parmesan

50g x Magic Dust

For the Lamb Rack

Directions
For the Lamb Rack
Make a paste with the Magic dust & Olive Oil, rub the lamb rack all over & allow to sit on the bench for 30 minutes to come to room temp.
Fire up your Webber Grill & cook over a medium heat for 20-30 minutes or until the core temp reached 45°c on a meat thermometer.
Once the meat is cooked, flare up the fire & cook the fat side directly on the flames to get the fat nice and crispy!
Allow to rest for 20 minutes & Carve!
For the Honey Gremolata
Add all the ingredients into a bowl & mix to combine, season with salt & pepper
For the Potato Gnocchi
In a large mixing bowl, add all the Ingredients & mix well to combine, turn the dough out onto the bench & knead for 2 minutes
Cut out a portion & roll into a log, then cut your individual gnocchi pieces.
Add some water to the stove & boil the gnocchi for 2 minutes or until they start to float.
Remove them from the water & add to a tray, season with magic dust & then fry in a pan until golden brown.
To Serve
Plate up the fried gnocchi on the base of your serving plate
Carve up your lamb & place nicely over the top of the gnocchi
Drizzle over the honey gremolata & Serve up!
