Ingredients
500g Streaky Bacon
4 Large Chicken Breasts

150g Lane's BBQ Sweet Heat Rub
1 Whole Turkish Loaf - Sliced in half lengthways
1 Head of Cos Lettuce - Washed
4 Tomatoes - Sliced
2 Avocados - Sliced
6 Slices of Cheddar Cheese

100g Lane's BBQ Sorta White Sauce

100g Lane's BBQ One Legged Chicken Sauce
Directions
Cut a Cross section in your chicken breasts & give a good season with Lane’s BBQ Sweet Heat, allow to marinade for about an hour
Fire up your Grill/Smoker to 190°c/370°f
Lay your bacon out on a flat tray & give a good season with Lane’s BBQ Sweet Heat
Put the Chicken onto the smoker along with the bacon & allow to cook for around 30 minutes – or until the bacon is crispy & the chicken has reached 65°c on a meat probe.
While that is cooking, slice your tomatoes & Avocados & set aside
Slice the Turkish loaf lengthways & put the cheese on to top side – then toast the bread on the smoker & allow the cheese to melt (around 5 minutes)
To make the sauce, in a small bowl whisk together the Lane’s BBQ Sorta white & the Lane’s BBQ One legged chicken, whisk to combine & Set aside
Once the chicken is cooked, slice it around 1cm thick pieces & we are ready to assemble our sandwich!
To assemble, start with your bottom layer of bread, then lay down some lettuce leaves, followed by the sliced tomatoes, sliced Avocados, sliced chicken, bacon strips & pour over the sauce, place the top half of the bread on & cut into your desired portion sizes!
