Ingredients
500g x Mozzarella – cut into sticks
100g x Plain flour
3 x Eggs
250g x Panko Break Crumbs
50g x Lane’s BBQ Garlic2 Rub
2lt x Veg oil – For Frying
400g x Cashews
50g x Honey
50g x Olive oil
50g x Lane’s BBQ Chili & Lime Rub
1kg x Chicken Wings
100g x Plain Flour
3 x Eggs
1 x bag of Doritos – Crushed
30g x Lane’s BBQ Cubano
200g x Blue Cheese
100g x Thickened Cream
500g x Chicken Breast
50g x Lane’s BBQ Signature Rub
50ml x Olive oil
100ml x Lane’s BBQ Kinda Sweet
¼ x Red Cabbage – Finely sliced
1 x Carrot - Grated
100ml x Lane’s BBQ Sorta white
10 x Brioche Slider Buns

Directions
Fried Mozzarella Sticks
Setup a Crumbing station by adding the flour to a bowl, into a separate bowl add the eggs & into a third bowl add the Panko
Give everything a season with Salt & pepper
Now time to crumb the mozzarella Sticks
Dip them in flour, then into the egg wash & finish in the panko, ensuring that they are coated properly – give them a double crumb to be safe
Heat the oil to 180°c in a medium sized pot
- Fry the mozzarella sticks until golden brown & crispy
- Season with the garlic2
Honey chilli & lime Smoked Cashews
Fire up your smoker to 360°f (180°c)
Into a oven tray, add all the ingredients together & mix them to combine
Smoke for 30 minutes until the honey has turned golden brown.
Crispy Chicken Wings
Fire up the Smoker to 360°f (180°c)
Cut your wings into pieces, following the Joints
Coat the wings in flour, then dip them into egg wash then finish them off in the crushed Doritos
Lay them onto a wire rack & smoke them for 20-25 minutes or until golden brown.
To make the sauce, Whisk the blue cheese, Cubano seasoning & cream until smooth,
You may need to adjust the cream to make it a bit runnier – this is up to you!
Plate up onto your serving dish with a small bowl of the blue cheese dressing & Dig right in!
Signature Chicken Sliders
Fire up the smoker to 180°c
Into a bowl add the Chicken Breast, cover with olive oil & season with Lane’s BBQ Signature Rub,
Smoke for 30 minutes or until internal temp has reached 70°c, making sure to glaze them with the Kinda Sweet sauce every 10 minutes
Remove from the smoker & chop into small pieces, add to a bowl with some more of the Kinda sweet sauce
Into a separate bowl add the carrot & shredded red cabbage, add the Sorta White sauce & mix well to combine
Slice open the Brioche sliders, add a spoonful of the chicken mix, then add the slaw, top it off with the Brioche Bun top & Dig Right in!
